Sweet Potatoes alla Michele

Thanksgiving isn’t complete without a homemade sweet potato casserole.

8 large sweet potatoes
¼ cup of  heavy cream
¼ stick of butter
½ cup of honey
1 cup of walnuts
¼ tsp ginger
¼ tsp nutmeg
¼ tsp cinnamon
1 pinch of salt


Boil the sweet potatoes with the skin on in a large saucepan until cooked (soft).
Remove the skin and put the flesh in a bowl, mash them, add the cream and butter.
Stir in the spices and salt.
Mix well.

In a bundt pan, first put the walnuts to lightly cover the bottom.
Then add the honey over the walnuts.
Then cover everything with the mashed sweet potatoes. Cover with tinfoil so that it does not become crispy.

Bake at 350F (165C) for 35 minutes.

When it’s done, delicately turn the mold over onto a large round plate and voila!
