SWEET POTATO AND GOAT SALAD
3 tbsp white wine vinegar
½ small red onion, peeled and cut into 3mm thick slices
½ tsp of sugar
¼ tsp of salt
Place ingredients in a medium bowl. Let marinate for at least two hours.

5-6 sweet potatoes, peeled and cut into pieces
3 tbsp olive oil
½ tsp of mustard or coriander seeds
Heat the oven to 430F. Mix everything on a baking sheet lined with parchment paper and make sure that the pieces of sweet potatoes are spaced out. Roast for 20 minutes, then let it cool.
3 limes, for the zest
3 tbsp olive oil
A bunch of cilantro or mint leaves, very finely chopped
Mix everything together for a smooth and shiny green salsa.
1 cup of goat cheese cut in pieces
½ cup of pistachios, roughly chopped
Once the sweet potatoes are cold, arrange them on a platter and sprinkle the pieces of cheese, onions (drained) and finish with a drizzle of salsa verde and pistachios.
